The stretching machine is composed by n.5 working sections: - Section of feeding and cutting of raw materials: where is placed the cutter. The thickness of the cut can be adjusted; - Section of cooking: where are the augers suitable to transport and pre-stretching of the curd. This section is designed with double chamber in order to keep constant the cooking temperature; - Section of stretching with a double section of dipping arms: where is done the final stretching of the cheese mass; - Section of water heating: equipped with a thermoregulating system which allows to heat the stretching water through direct input of steam by an injector; - Section of control and management: where is the electrical control panel made in a box of stainless steel with watertight IP65 with commands at low voltage.
Main construction features
The machine is fully made in stainless steel AISI304 and the parts in contact with the product are covered by a film of Teflon synthetized at high temperature. The stretching machine is made in compliance to CEE regulations in force, favoring the cleaning and sanitation operations. Furthermore, the machine is equipped of all the safeties needed for the operator.
