Description

The moulding section feeds a moulding carousel (pre-hardening head) where are located several drums. The drums, with desired shape, are welded radially on rotary disk. The cheese mass, from the feeding hopper, will be pushed in the extrusion section, through two counter-rotating augers with adjustable speed. It's possible to adjust automatically the height of filling of the drums by PLC, in order to regulate the weight of finished product. The moulding head has a rotational motion around its axis, therefore the drums once filled during the pass in the loading section, will be sent to the unloading section, where the product will fall in the cooling vat, or on the loader. During this moving, the drums filled of the cheese mass, are totally surrounded by cooling water with set temperature. The passing of the moulding drums in the water, allows to obtain a product already pre-hardened. Once unloaded the products, the drums return to the loading section, thanks to the circular moving of the moulding drum. Main construction features

The machine is fully made in stainless steel AISI304 and the parts in contact with the product are covered by a film of Teflon synthetized at high temperature, or in alternative, are made with food plastic material, in compliance to the regulations in force for the materials in contact with the food products. The machine is made in compliance to CEE regulations in force, favoring the cleaning and sanitation operations. Furthermore, the machine is equipped of all the safeties needed for the operator.
